Instead of traditional patios or raised beds, freshly harvested cherries are placed into one metre deep static drying boxes capable of holding up to 15,000 litres of coffee. Air circulates through a vented floor while temperatures are continuously monitored and kept below 40°C. The cherries remain completely still throughout the drying process, allowing moisture to leave the fruit slowly and evenly.
